About Carcassonne
A prefecture in the Aude department (Occitanie region), Carcassonne is famous for its medieval fortress, a UNESCO world heritage site since 1997. Situated on the banks of the Aude river, the commune is traditionally split in half: the lower town or Bastide Saint-Louis and the upper town or la Cité. There are sixteen nursery schools, fourteen elementary schools and four primary schools in Carcassonne. The Midi canal which connects Toulouse to the Mediterranean crosses the city, flowing under the pont Marengo and pont de la Paix bridges. From the 8th to the 18th century, Carcassonne’s textile production made it a major industrial city. Le petit carcassonnais, an oval bun invented in 1935 by pastry chef Gau, is a local speciality. The recipe is passed on within the Fuster family which has been continuing the tradition for 3 generations in the boulangerie des Halles.
